Nicole is a self-taught baker who loves creating the perfect baked accompaniment for any time of the day: breakfast, brunch, afternoon tea, or an ending to a humble or elaborate dinner. Thus was born the “Tea Cake” menu. Inside the humble tea cake resides a mélange of complimentary flavors and creative combinations which are inspired by the many places where Nicole lived and traveled throughout her life. The natural fats in the nut flours create cakes which continue to improve until every slice has disappeared and the flavor of the nuts compliment the other ingredients in each cake. All of the tea cakes may be enjoyed by themselves or paired with a variety of enhancements: whipped cream, citrus curd, chocolate sauce, vanilla custard sauce, fresh fruit, compotes, or any gastronomic delight that may inspire you.
